Veggie Rice and Bean Skillet
This is a healthy hearty vegetarian dish that is simple to make, with just one pot to clean!

- 1 TBS butter
- 1 green bell pepper, diced
- 1 cup brown rice
- 1 1/2 cup water
- 1 can (14.5 oz) fire roasted diced tomatoes with garlic, undrained
- 1 can (15 oz) black beans, drained & rinsed
- 1 zucchini, diced
- 1 tsp cumin
- salt and pepper to taste
- 1/2 cup pepper jack cheese
Saute bell pepper in butter for about 4 minutes. Stir in the rice and then add water, tomatoes, black beans, zucchini, cumin, and a pinch of salt. Bring to boil then cover and cook according to rice instructions.
Remove from heat. Sprinkle with cheese and top with avocado.
