My kids won’t touch broccoli, which is surprising because my youngest will eat just about anything. But they ate it in this One Pot Tomato Broccoli Pasta dish! Woot, woot! Although I can’t say the same for the tomatoes… but my sister and I enjoyed them!
Here is a funny story, but before I begin, I need to give a little background.
In our home, I like to pride myself on my sense of smell. I can smell a dirty diaper a room away and my husband cannot open a bag of chocolate, a quart of ice-cream, or any sweets in the house without me knowing about it. I am not professing to be a blood hound or anything but I can smell pretty well.
Looking at our boys, we are always curious what characteristics and traits they will inherit from us. For example, we know Boston has my eyes, my husbands teeth, my dad’s full set of hair, and apparently my keen sense of smell.
Yesterday after putting Tennessee down for a nap, I popped a piece of chocolate into my mouth before heading for the couch to read to Boston. He piled the books on my lap and climbed up beside me. Instead of encouraging me to open the book right away he had a questioning look on his face and said
“I smell something…”
Starting to giggling, I innocently asked him what it was he smelled.
He replied, “I smell something… like candy.”
I couldn’t help but laugh, one for being caught and two for the way I was caught. Most people would see it first, but I was smelled out… by a three year old. ๐
Anyways, hope you enjoy this one pot tomato broccoli pasta dish as much as we do!
One Pot Tomato Broccoli Pasta
Ingredients
- 2 TBS butter or olive oil
- 1 small onion, diced
- 3 garlic cloves, diced
- 2 cups chicken broth or vegetable broth
- 1 cup water
- 2 1/2 cups gluten free pasta
- juice from 1 lemon
- 1 cup broccoli, chopped
- 1 tsp dried basil
- 1 tsp salt
- 1/2 tsp pepper
- 1 cup chery tomatoes, chopped
- 1/2 cup mozzarella cheese
- 1/2 cup pepper jack cheese
Instructions
- Saute the onions and garlic in the butter/oil on medium high heat until translucent. Add broth, water, pasta, lemon juice, broccoli, basil, salt, and pepper. Cook according to pasta directions, uncovered, stirring occasionally.
- When finished, stir in the tomatoes and then the cheese (which helps absorb any remaining liquid). Serve and enjoy!
