These all-raw, sugar-free, gluten-free, dairy-free, hassle-free, guilt-free (should I keep going? ๐ ) Nutty Coconut Ball Cookies will satisfy your sweet tooth and do your body good!
I should probably rename these cookies the superfood cookie, because they are packed with fiber, protein, iron, potassium, calcium, magnesium, cooper, good fatty-acids, and vitamin-E. All thanks to just four ingredients.
Oh and my boys love these cookies, which is saying a lot, especially from my three year old.
Nutty Coconut Protein Balls
Ingredients
- 1 cup almonds
- 3/4 cup pecans
- 1 cup medjoole dates (pitted)
- 1/2 cup shredded coconut
Instructions
- Blend the nuts in a Food Processor. Blend in the dates. Mix in the coconut.
- Form into small balls and serve.
Notes
I always resort to these Nutty Coconut Ball Cookies whenever my sweet tooth starts acting up, because I can’t eat more than two or three without feeling full. Enjoy!
