What?! A healthy sugar free granola recipe that still tastes great?! How? Well, I didn’t want to use just honey, because then it has that honey overpowering taste, I also wanted it to have that crumbly texture that brown sugar gives… so I used dates!
Medjool dates are a good source of fiber and contain high levels of magnesium and potassium. By mixing the dates with the nuts, I was able to get the consistency I wanted, the sweetness I desired, and the satisfaction of making granola without processed sugars! The granola turned out great and my husband even said it was good! Woot, woot! I added freeze dried strawberries and blueberries for extra taste and color.
Sugar Free Granola
Ingredients
- 1/2 cup 1/2 cup almonds
- 7 medjool dates (remove pits)
- 1/2 cup shredded coconut
- 1 tsp cinnamon
- 1 1/2 tsp vanilla
- 1 cup oats (gluten free oats)
- 2 tsp butter or coconut oil
- 1 TBS HONEY
OPTIONAL
- 1/2 cup freeze dried strawberries
- 1/2 cup freeze dried blueberries
Instructions
- Preheat oven to 300 F. Place almonds and dates in a food processor and blend until combined. The almonds should be in smaller pieces but not turned into flour. Transfer into bowl to mix in coconut, cinnamon, vanilla, and oats.
- In saucepan, melt butter and honey over low heat. Stir until they begin to caramelize. Pour butter/honey over granola mixture and toss well.
- Spread mixture out onto a baking sheet. Bake 20 minutes, stirring occasionally. Continue to bake until granola is golden brown, about 5-15 minutes longer. Let cool and toss with freeze dried fruits if desired. Store airtight at room temperature.
My friend came to visit this past weekend from down south. We spent Saturday touring the historic city of Boston while finding great locations to eat our healthy homemade sugar free granola!
Of course we had to share and the soldiers couldn’t get enough of it! Granola makes for a perfect snack for the youngsters (or yourself) in church.
Our sugar-free granola was soooo good that we ran out and were forced to find an alternate food source from Mike’s Pastries, as shown below in front of the oldest wood building in Boston, Paul Revere’s home.
I would say that the granola and our trip to Boston were a success!
