My little guy loves bread and would eat it all the time if I let him. In a quest to get a little variety in our breakfast menu, I remembered this simple gluten-free pancake recipe that my mom used to make. It can be whipped up in just a few minutes and my toddler really enjoys them. They also store well in the fridge for a few days, so if you need a quick snack for your littles, these pancakes are great!
Oh, and did I mention that these are sugar-free pancakes? Yep, there are no sugar in these! The cinnamon is optional, but I am a fan of it.
How to make this gluten-free pancake recipe
Making these gluten-free pancakes is super easy and I actually just involve my young children in the process. Simply throw all the wet ingredients into a bowl to mix. When everything is combined, add in the dry ingredients and mix again. Butter up your frying pan and start frying up some pancakes!
Wait for the bubbles to appear before flipping over the pancakes.

Gluten Free Pancakes
Ingredients
- 3/4 cup water/milk/almond milk
- 2 TBS oil
- 3 eggs
- 1 TBS maple syrup (optional)
- 1 cup gluten free flour
- 1/4 tsp salt
- 3/4 tsp baking powder
Instructions
- Mix together eggs, oil, water/milk, and syrup. Then stir in the remaining ingredients.
- Bake on hot griddle. When upsides of pancakes are bubbly, the cakes are ready to flip.
