This is our go-to-meal when we have company over because it is always a favorite. Everyone always asks for the recipe and cannot believe how simple it is to make. My little picky eater even loves these (definitely a classy step up from chicken nuggets!). The ingredients are staples, so you no doubt have everything on hand. “You and I, we know the secret to life… it’s butter.” I couldn’t agree more with this quote from Last Holiday, except I would add garlic to that! Don’t worry about cooking the garlic too much on this step, it is mostly to melt the butter.
Feel free to play around with some of the ingredients, adding a little bit more of whatever you really like, for example parmesan cheese!
Assemble the mixtures together for easy dipping: chicken, butter, corn flakes, then pan. 450 F does seem high, but believe me, you need it that hot to help crisp the outside while keeping the inside nice and moist. To check if the chicken is done, cut into one of the biggest pieces to see if it is still pink inside.

Garlic Parmesan Chicken
Ingredients
- 4-5 cloves garlic cloves
- 4 cups butter
- 2 lbs chicken
- 1 cup corn flakes (crushed)
- 1 TBS flour (try gluten free flour!)
- 1/3 cup parmesan cheese
- 1 TBS parsley
- 1/4 tsp salt
- 1/8 tsp black pepper
- Italian seasoning (few shakes)
Instructions
- Melt butter in saucepan with chopped garlic. Put aside.
- Mix remaining ingredients (except the chicken) in a separate bowl.
- Cut chicken in pieces. One at a time, dip the chicken in the butter, then coat in the corn flake mixture, and place on glass pan. Separate chicken pieces in the pan. Drizzle remaining butter over chicken.
- Cook at 450 F for about 10-15 minutes or until crispy and not pink inside.
