This authentic Mexican rice will be a great addition to Taco Tuesdays!
I love Mexican food! It is absolutely delicious and has many healthy meal options. This Mexican Rice/Spanish Rice recipe is very tasty and made from scratch– my favorite way to have food prepared. Serve it with beans and you have yourself a complete protein. Beware of any leftovers… I usually find myself sneaking a few spoonfuls of the Mexican rice into my mouth before covering it for the refrigerator.
Authentic Mexican Rice
This authentic Mexican rice will be a great addition to Taco Tuesdays!
Ingredients
- 1 TBS butter
- 1 small onion (chopped)
- 4 garlic cloves (diced)
- 2 cups brown rice
- 4 cups water
- 2 1/2 cups tomato sauce
- 2 tsp chili powder
- 2 1/2 tsp cumin
- 1 tsp oregano
- 1-2 cups corn
- salt (to taste)
Instructions
- In a large saucepan, melt butter then saute onions over medium high heat until it starts becoming translucent. Add the garlic and rice and saute for about two minutes.
- Add remaining ingredients, except for the corn, and bring to boil, then cover and turn heat to low. Cook for about 40 minutes (follow instructions on rice).
- When the rice is finished cooking, mix in the corn and keep covered until ready to serve.
Notes
*I like using frozen corn because it cools the rice down quicker.
