How about dessert for breakfast?! This all raw strawberry pie is a delicious healthy treat that you can eat any time of day!
A few family members came into town for the holiday weekend (what better place to celebrate the 4th of July than Boston where it all started?!). I decided to dive into my βall-rawβ days to pull out this delicious and nutritious all raw strawberry pie. To bring out the holiday spirit via red, white, and blue, I sprinkled coconut on top and garnished with blueberries. It makes for a great dessert or have it for breakfast- guilt free! Your taste buds and body will thank you!
{All Raw} Strawberry Pie
Ingredients
CRUST
- 3/4 cup almonds
- 3/4 cup pecans
- 6 dates (using medjool dates)
- 5 TBS shredded coconut
- 1 tsp vanilla
- pinch salt (to taste)
FILLING
- 2 bananas
- 3 cups strawberries (frozen)
- 1 cup cup water
- salt (to taste)
Instructions
- To make the crust, blend nuts on high speed in food processor until finely chopped but not powdered. Add dates and mix. Toss in remaining ingredients to combine. Then press the nut mixture evenly in pie pan and place it in the freezer.
- For the filling, combine all ingredients in blender in blend until smooth. Take out nut mixture from freezer and pour the fruit filling into the nut mixture. Place in freezer.
- It's ready to serve when fruit filling is firm. Garnish with fruit and nuts.
Before embarking on our busy, fun-filled day in Boston, we enjoyed a few pieces of our all raw strawberry pie for breakfast.
