Delicious & healthy orange date bars made from all raw ingredients.
With the holidays rapidly approaching, I thought it would be wise to prepare a few healthy treats to have on hand to help curb my sweet tooth.
As many know, it is a BIG one. ๐
Going through my raw recipe creations I enjoyed back in my college days, I came across these orange date bars.
Yum, YUM!
With very few ingredients they combine to create these tasty hearty dessert like bars that are divine. And super simple to make which is always a plus.
A little random interlude but I promise it ties in…… I love Dr. Seuss books and so do my boys. He was such a clever writer, with stories and principles that everyone can relate to-including Boston, my 3 year old. One of his favorites is “Green Eggs and Ham.”
In our kitchen, we try to adhere to the policy of trying new things at least once just to see whether or not we like them. A difficult policy to enforce with toddlers as many can attest to. I tried to get Boston to take a bite of one of the orange date bars and he just stuck up his nose and said no. Since we had recently read “Green Eggs and Ham”, I thought I could relate trying these to trying Sam’s green eggs and ham. “E for effort mom but still no dice” was the over all message.
It wasn’t until his younger brother tasted them and then asked for more that Boston decided to give them a try. I kid you not, the exact sentence he said after he ate one was,
“I do like them! I do like these mommy!” Made me laugh, because it sounded just like the book! Hope you enjoy them too! Oh, and what’s your favorite Dr. Seuss book?
{All Raw} Orange Date Bars
Ingredients
Instructions
- Soak dates in juice of orange for about 30โ50 minutes. Set aside.
- Crust: Grind the nuts until almost like flour. Mix in flour, cinnamon, & maple syrup.
- Filling: Blend the soaked dates with the juice and orange zest.Press half the crust mixture into a square 9x9 baking pan. Spread the filling on top of mixture.
- Freeze until a little firm and then place the remaining crust mixture on top. Freeze until firm, serve, and enjoy!
